Extra Clean Fee - This fee will be charged when meat requires more than normal cleaning, such as removal of excessive hair, gravel, bullet fragments, etc. This will be discussed with you upon inspection when meat is received at the BonTon shop,  In some cases, it may not be until processing is underway that  the problem is identified - in which case we will document and notify you. Please note: BonTon also reserves the right to deny service if product is considered to increase an environmental health risk for other products in house.

Hanging Fees - This fee is dependent on space availability in the cooler due to the size of some carcasses, the varying preferences for hanging/drying and presence of inspected meat in the cooler.

Vacuum Packaging - We intend to vacuum package prepared products like sausages and cured items as well as fresh cuts as it will prolong the quality of the meat. This is currently established at $0.15/package unless already identified in the above pricing structure. Please let us know if you prefer NOT to vacuum pack your meat. 


Charcuterie for Custom Cutting Customers

For those that supply their own meat: hunters, farmers and those that purchase through farm gate sales.

Most of these options are available for pork, beef, moose or caribou. Pork or beef fat are generally added for sausages at approximately 25-35% based on the type and customer preference.
